This product is made from organic grass fed beef, thus, the color would be noticeably darker than that of grain fed beef. Apart from the cattle's diet, the breed, package, cutting and temperature also determine the color of the meat. According to USDA, discoloration does not necessarily mean the meat is spoiled, but instead simply the chemical reaction between the protein myoglobin and oxygen. Also, the surface area of minced meat is larger, which speeds up the aforementioned reaction. The meat will return to its normal color once it is in contact with oxygen, as NSW Food Authority points out.

How to explain why Irish Beef is as good as it is?

Also due to non-use of herbicides and pesticides our organic farms are free from these residues. Our cattle live on the land in a totally natural environment.
Secondly, it is the grass advantage. All our organic beef cattle are raised on vegetarian grass fed diets only. Ireland is very fortunate to have a weather system influenced by the Gulf Stream, a mild climate with lots of rain. This helps our organic grass to grow all year around, giving our livestock a happy and healthy life and while also creating a wonderful eating quality in the meat.
