As the saying goes “Round Navel on September and Tip on October” in hairy crabs, it means male crab seasonal on September and female crab seasonal on October.
The different between male hairy carb and female hairy crab is the “brown crab”. Brown crab coms from the gonads of crabs. The crab eggs of female crabs are salmon pick colour, also can called crab roe. The taste is a bit gritty and grainy. The male crab of crab essence is milky colour, also can called brown carb. It tastes like jelly, delicate and dense.
About Cooking Hairy Crabs:
- When cleaning the hairy crabs, do not unite the rope from the hairy crab. Use a toothbrush to clean of the dirty things on the crab’s body
- Pour water into boiler and pit perilla leaves on the steaming plate.
- After the water boils, put the hairy crab’s belly up on the steaming dish with perilla leaves, then cover it with some of perilla leaves top on the hairy crab’s belly.
- When the crab shell turns red and the crab meat turns white, it is ready to eat.

The steaming time of hairy crab will be depends of different size of hairy carb. Here are the reference times of steaming hairy crabs:

Tips for Eating Hairy Crabs :

Recommend to eat the brown meat first, because the hot brown meat is more fragrant.
- When eating the hairy crab, can dip some vinegar to enhance the flavor of crab, you can add some brown sugar and shredded ginger to the carb vinegar.

After finish eating the hairy crab, you can drink a cup of ginger tea to dispel cold of body.
- Carb’s heart, gills intestines and stomach are very cold natured foods, remember try not to eat those edible viscera.
